"What's In Your Cup?"
Up early the doggies are crying to get relief. Made a cup of protein hot chocolate.
It good and warm. Looks like we are in for some rain. How nice! (sarcasim)
QOTD: What is your favorite comfort food? How do you keep it pouch friendly? When do you get a hankering for it?
Answer QOTD: I like chicken soup w/wide egg noodles. I omit the wide noodles,(they get stuck) and use orzo's instead. On cold rainy days.

Good morning Mary and everyone to follow. I am having cheese and triscuits not really hungry but needed something. Had two small cups of joe upon rising. I spent the night in the church basement with the boy scouts. So really needed the pick me up earlier.....I am on my way to work so will have more on the drive...
QOTD: I think my favorite comfort food now is beans. I make tons of them probably a crock a week...I think my favorite currently is great northerns with chicken or turkey....a bit of stock after it is done add a jar of salsa and a block of cheese its white chili best ever in my opinion.....Going to make the boys a pot of chili soon as they love it...Have a nice day everyone!!!!!

Good Morning All,
Had a cup of tea this morning, protein shake is next. I have to go grocery shopping today. I am trying to get myself to go to the gym as well. I might even throw in a hair cut. I hate to cut it because it is falling out. I don't want to help it along any. lol
QOTD: My comfort food is cabbage rolls (we call them pigs in a blanket). I do not adjust them at all to be wl friendly. I do not eat them often so I don't adjust them. When I make them I eat one freeze a couple and then give the rest to my folks. They remind me of my grandma, she has been gone for about 14 years. She was the best cook ever. She was German and Hungarian. I miss her cooking. Although now I don't think I could eat a lot of it because it was a lot of pasta and creams. I would try to eat her crepes though.

I have a recipe for unstuffed cabbage it is good but you don't have to boil the cabbage or roll em.
here it is.
2. Brown ground meat with onion in skillet stirring and crumbling the meat as it cooks. Drain well, rinse if desired.
3. While meat browns, cut cabbage into wedges and then slice each wedge to make small, but not tiny, shreds.
4. To cooked meat, add canned tomatoes, ketchup/sauce, uncooked rice, and any other spices or seasonings you wish. You can use the Italian or Mexican style tomatoes to add extra flavor if desired. Allow to simmer briefly. Add water if the mixture seems to need it. The rice will absorbe approximately 1 cup of liquid.
5. Place a layer of cabbage in a large or two small casserole dishes (sprayed with Pam or Olive Oil). Cover the cabbage with a layer of the meat/rice/tomatoe mixture. Repeat layers till all ingredients are used up. Try to end with a meat mixture layer.
6. Sprinkle lightly with cheese if desired.
7. Bake for approximately 45 minutes.

After I make all the rolls I can with the large cabbage leaves, I make a casserole, like above with the smaller leaves and layer it too. That is, if I have enough meat left over. I used to start off with 20# of meat and make a ton of them, but the last time I made them I only used 7.5 pounds of meat to begin. We no longer have a large freezer and the kids don't come shopping in my pantry or freezer since we're so far away now. I have several packages frozen right now and at Christmas I did give the kids a couple of packages each too. Gary and I make them together. He does the cabbage boiling, and I make the meat mixture and roll the golabki and package them. We work well together.
